I’m glad you enjoyed the food there. Do me a favor, you don’t have to of course. If you should go there again ask if the ladies name is Taide. I’ve been tring to get in touch with them for a long time. I agree with you, they do have the best birria and tortas ahogadas. I look forward to hearing from you. I hope it is Taide and Ricardos eatery.

The ones I have tried in PV have been goat. Ask for chiva (sic). My favorite is Birria Robles ‘El Licenciado’ . Here is a link.

Some areas of Mexico use cabrito for their birria.
Most of the places here in PV, and Jalisco in general, use beef.
