What’s on the Table – Pt.2 Jamaica (Hibiscus Tea)

We always keep a fresh pitcher of cold Jamaica (pronounced “ha-my-ka”), a hibiscus tea, in the refrigerator. It’s a refreshing, healthier alternative to soft drinks. Hibiscus tea is said to have many health benefits, including lowering blood pressure and providing flavonoids, although we just drink it because it tastes good. It’s been compared to cranberry juice in flavor.

It’s very easy to make. Boil four cups of water.  Add two cups of
hibiscus flowers and let steep for an hour. Strain and pour into a one
gallon pitcher. Fill the pitcher with water and add sugar to taste.
Unsweetened hibiscus tea is very tart. It takes a good amount of sugar
to remove the tartness. We drink it unsweetened now which took a while
to get used to. Most people serve it very sweet in Mexico.
